First Harvest.

Today Rob surprised me with a handful of fresh dandelion leaves that he picked at the ranch. Dandelion leaves are best harvested from the plant before it flowers. Pick off the smaller leaves and eat them right away. Make sure that the plant has been growing in a natural, chemical free environment. We enjoyed them with a good olive oil and a bit of colima sea salt. They also make a nice addition to any salad. Tomorrow I might try dressing them in a bacon and cider vinegar dressing. Not only are they delicious, but dandelion leaves also have many health benefits. They contain potent antioxidants and are loaded with vitamins, minerals and fiber.
